The Week's Menu (in progress)
So I thought I'd try a new kind of blog post. Perhaps someone may find it useful.
Tonight: Rosemary Potato Soup with Crispy Carrots (this is perfect for tonight because our fridge is bare BUT we do happen to have potatoes, carrots, chicken stock AND rosemary)

Dinner #1: Super Easy Chicken Caesar Wrap with something

Dinner #2 Mushroom Fennel Quinoa Stuffing **loved it
and Chicken with Lemon and Capers **loved it.
Dinner #3 Copy Cat Olive Garden Soup and bread **loved it. Had it after skiing and it hit the spot.
Dinner #4 Korean Beef with broccoli (we've done this one several times; very easy)

Dinner #5 Crispy Chickpea Pita
This one is an old favorite; the boys' favorite. I'm making it for their birthday this week. I'm not finding the original recipe. Even so, I made it with a few adaptations. Basically you have a flat pita (best to have the pocket kind, toasted and brushed with olive oil), spread with hummus, topped with fried chickpeas (then tossed with lemon juice, parsley, salt and pepper), topped with a tomato/parsley/olive oil/salt salad, a sauce of plain Greek yogurt/dill/pressed garlic/salt, thinly sliced red onions, feta cheese, and some hot sauce if you'd like. Yum! (and healthy and cheap)
