Yes, it has been such a year. Not deliberately but the fun has just sort of found us. It's been delicious fun and quality family time. We do love to gather around the breakfast table.
Here are the four new pancakes we've tried that stick out in my mind as especially tasty:
(I usually use a combination of white and wheat flours. I also like to add in a generous amount of ground flaxseed to the batter as well.)
This summer we started with . . .
1. "Pancakes with Maine Blueberry Sauce" by Williams and Sonoma.( Picture courtesy of the Williams and Sonoma website) This blueberry sauce is wonderful! Just make sure you simmer it long enough so that it isn't runny.
2. Late this summer we started feasting on these "Zucchini Pancakes" by Pinch of Yum. (Picture by the same.) The whipped eggs make these so light and fluffy! I added a bit of cinnamon to these.
3. Back from last year, we've just started making these "Pumpkin Ginger Pancakes with Ginger Butter" fron food.com (photo found on food.com) That butter mixed with crystallized ginger is splendid. My kiddos love crystallized ginger.
4. Just yesterday I found these "Lemon Poppy Seed Yogurt Pancakes" from Two Peas and Their Pod blog. I was stoked to find these on Pinterest yesterday because Mr. Basil has such a fondness for the Lemon Poppy Seed Cookies from The Grainery. He pronounced them "so good!" this morning. They would have been even better with fresh blackberries.
These look fantastic...and so does you assistant cook! I am looking forward to these.

OOh, I like that one. Keep thinking. I'd like to stick with either a spice or an herb.
