Before I tell you about this tasty morsel, I've got a little comedy break from Basil. As get this little post ready, he's been reading kids jokes to me. He is sitting right here busting a gut. Here's the one I personally found the funniest.

Anywho . . . Pinterest score again! I tell you that is one social media outlet that has something good going for it. It has helped me in all kinds of ways.
I pinned this recipe to my "Autumn Food" board the other day and made it on Sunday. The two main ingredients are staple around here: sweet potato and black beans. Two of the accessory ingredients I have never cooked with before. They are easily found. The Himalayan Pink Sea Salt I found in the bulk section of our natural foods store and the cashews are, of course, found anywhere.
This simple little dish uses an easy method I've never heard of before. It took about 3-5 minutes to make and added so much flavor. Lime crema to drizzle over the top of the baked sweet potato. Cashews, lime juice, salt, and water. That's it!
Some may enjoy this dish more at lunch then dinner due to the fact that it is vegetation. It worked just fine for us for dinner. It fits all my criteria for a keeper: delicious, healthy, easy to make, inexpensive.
