Meatless meal of the week . . .
Easy Chickpea Curry with Coconut Milk. Found here. Doug and I really liked it. Healthy, great flavors, inexpensive, quick. The kids tolerated it on varying levels. All of them were required to eat some. They didn't fall off their chairs in disgust anyway. :) That just tells me that I don't cook with enough variety. More curries, I say!! They'll get used to it. :)
