Preparing for Lent: Simple Meals (on this Iowa caucus day)
Simple light lunch. Nutty Quinoa Salad.
(no exact measurements necessary)
Mix about two cups cooked quinoa with sliced green onions (3-4), 1/2 cups raisins, 1/2 cup peanuts. Stir in a dressing of about 1/4 cup olive oil, 1/4 vinegar, a pinch or two of cayenne, and some salt and pepper.
