Nature's Goodness (in my belly)

Tonight's bounty.

This picture doesn't do the yummy sauce on this dish any justice; you can't really see it. So yeah, this is a Chickpea Curry. We like it. We've eaten it twice in the last two weeks. My pickiest eater loves it; that's quite the inspiration for me to make it again. Plus, it has peas and cilantro in it. Both of which we have lots of in the garden right now. Quick, easy, healthy, and inexpensive. Creamy, yet dairy-free.

Give it a try, Mom. My mom and I had a brief conversation about stir fries and curries the other day on the phone. I think I'm beginning a stir fry/curry kick these days. Lots of veggies to work with in the garden and it can easily be gluten and dairy-free. Both huge pluses for me.
