December 13: Saint Lucy, Saint of Light, Patroness of Blindness, Virgin and Martyr of the 3rd century.
We like to celebrate this memorial in the Swedish fashion because we are largely of Scandinavian descent. I also love the reminder of light in the depths of the darkness of winter. Jesus, the Light that shines in the darkness.
Last week we celebrated God's goodness through Saint Nicholas. What a saint! This is the day we open stockings, in remembrance of the generosity and personal sacrifice of Nicholas.
Saint Nicholas was from Myra, which is located in what we call the country of Turkey today. So we had Turkish Lentil Soup for dinner. What a great soup! This will go in our regular rotation from now on. Tasty and healthy! Here's the recipe.
